Dorset Oysters was born when Pete Miles; restaurant owner, cook and fisherman, couldn't source local oysters for his restaurant Storm in Poole, even though Poole has some of the biggest oyster beds in the country. Dorset Oysters now provide fresh quality shellfish to some of the top restaurants in the UK including; Mark Hix, Marco Pierre White, Ramsey's, and many more.
We now purify rock oysters, native oysters (when in season), clams, cockles and american hard shell. Because of Pete's close relationship with the fishing industry in Poole, he tries to source as much local produce as he can for the restaurant. We can now roll out the service and get prime shellfish around the country for people to enjoy at home. So even if you are a shellfish lover away from the sea we can get a good range of seafood to your door.
Pete uses homemade prawn pots and became aware very early on for the need of sustainable fishing methods, therefore, it has been a way of life for him and not a trend. After watching Keith Floyd on TV Pete became inspired to cook and whilst delivering catches to various restaurants became friendly with chefs and owners and felt the need to open his own. He worked for many years in his favourite restaurant and eventually bought it in 1999 resulting in the renouned local restaurant called Storm in Poole.
