Fish n' Hix Masterclasses
Mark Hix will be taking the fear out of cooking with fish by hosting a series of 'Fish n' Hix' masterclasses at Rocco Forte's Brown's Hotel, for those who want to learn valuable filleting and fish preparation skills. Renowned for his passion for local produce, Hix will share his wealth of experience with guests, teaching them about different kinds of fish, how to prepare, cook and eat them!
The Fish n' Hix Masterclasses cost £185 per person and include:
•The two-hour masterclass
•A three course feast dinner including all prepared fish, dessert and a bottle of wine per person
•A Brown's Hotel apron
•A signed Mark Hix cookery book
The two-hour interactive class begins with a brief overview of the various types of fish and the preparation process, with advice on filleting and cooking techniques including different sauces and wines to match. Under the careful guidance of Hix, guests will all try their hand at carving a smoked salmon, filleting a variety of fish, preparing Ceviche and salt baking a fish. Throughout the class Hix will share anecdotes and tips from his illustrious 27-year career, as well as answering questions. Throughout the class guests will be served each of the fish being prepared to include:
Starters
Albemarle smoked salmon 'Hix cure' with Corrigan's soda bread
Isle of Barra cockles with Burrow Hill cider and smoked Orkney bacon
Marinated Newlyn whiting with chilli and plantain crisps
Main course
Salt-baked St Margaret's Bay sea bass with buttered seakale
Chargrilled whole Start Point brill with aura potatoes and béarnaise sauce
Paper-baked Lyme Bay gurnard with steamed coastal greens
Dessert
Buttermilk pudding with blood orange
The Fish n' Hix Masterclasses will take place at Rocco Forte's Brown's Hotel on the following dates:

Further dates are to be released. There will be a maximum of ten guests at each masterclass. Classes will be held from 6pm - 8pm.
