Clarence Court Eggs
At HIX restaurants we like to use Clarence Court eggs on our menus. Clarence Court eggs come from rare bird breeds such as Burford Brown hens, Old Cotswold Legbars and Glady’s May Duck Eggs, Free-to-fly Quail eggs, Black Leghorn Bantam and they have some real seasonal egg gems in Spring/Summer on their speciality farm in Cornwall. The hens are not only rare breed but are fed on a natural maize diet which means that the eggs are packed with flavour and have a distinctive bright orange yolk. Mark Hix has been a supporter of Clarence Court eggs for many years so he was delighted when he was recently asked to develop a range of recipes for Clarence Court’s seasonal and non-seasonal egg range.
