De Beauvoir smoked salmon ‘Hix Cure’ was initially produced by Mark Hix at his home in North London, curing the salmon in salt and molasses and smoking it with oak and apple chips.
It is now smoked on the roof of Selfridges, London and is available at all HIX restaurants.
His smoked salmon won one gold star at the 2009 Great Taste Awards.
